I am doing 10 turkeys this morn. People not picking up til 11 this morning started my turkeys early usually takes about 5 hours but some are getting done already at 8 this morn. Any suggestions on how to keep warm for next couple hours??
 
Not without drying the meat or ruining the skin.

Timing is everything with turkey.
 
I have never done this, but can you stick it in the oven at low temp (150-180°F?) with foil around it? If folks are picking up to take to their homes, I don't know if the skin would stay crispy by the time they made it home anyways. How about putting in a cooler? I don't think the skin would get rubbery - soft maybe, but not rubber once all the fat has arleady rendered out.
 
I have too not picking up til later so wrapped them and sit in frig. The others are staying nice and hot in a cooler with a towl.
