Most of all loose the foil. Its silly at high heat temps.
Kind of torn on this one. I don't mind lowering the temps, I just don't want to end up with a 16 hour smoke on a 12 lb. packer. Gotta be a happy medium somewhere. Maybe in the 275-300 range? I might play around with lowering temps towards the end of the smoke.
