Recently, As I have no food license or catering license because of my move, I have been killing time in Texas doing some charity work for a few people through my Church.

This is a small 30 brisket sale we did recently. Normally, though I have cooked that many briskets before, even more at times, I have rarely had to defat and slice them for individual packaging before. It was a hassle doing it this way.
