It depends on the Ph of the sauce in question. Anything with a Ph of 4.5 or less is considered " Shelf Stable " or does not require refrigeration. All of my sauces fit into this category. I have some sauce in my pantry that has been there ( open ) for months that is still good. Problem is you can't tell if a sauce is shelf stable unless you have a Ph meter. If it says refrigerate after opening it may be an indication that it is not, however, I put it on my bottles because it stays a little fresher in the fridge.
