For the salad throwdown, I made a smoked eggplant salad. I think this is the first thing I have done on the smoker that has no meat in it.
On the smoker for an hour
Charred the tomato and onion before chopping them up
Charred the eggplants after smoking them
Added parsley, olive oil, a little cider vinegar, salt, pepper, and cumin. The finished salad:
On the plate with pulled chicken, smoked Italian sausage, my famous potato salad, and an orzo salad:
This was fun to make and a little different than what I usually do.
