We have a lot that do Santa Maria-style, and some even use real oak wood, others use a mix of charcoal and oak. I have seen a few that sell BBQ from smokers and that had smokers in the store. Not as common out here as the Santa Maria/Parilla guys. Some of these guys do some great Mexican style grilling though.
