Hi, in the past when I was involved with a local organisation we would cook them at 400 for 1 hr to 1.5 hrs and we rotated the rack pans every 30 minutes. As for the prep, we scrubbed them and poked um and wiped them with a little oil and salted them. We did them foiled, foiled in pans and nekid just on the pans. Honestly didn't make a whole lot of difference. If you have the help wrap them if you have the time, it was the way I liked them the best. Cook them till they hit 205 or just a tad more and you should be alright. If you have to hold them in a cooler then lower the pull temp as they will continue to cook in the cooler. Hope that helps that's just the way I did it and I am sure there are better ways. Have fun!
