The probes were reading cool initially so I put both probes in boiling water and the readings were in the low 190's. I adjusted the pb1 and pb2 values to get the temps to 212. After I removed them and they cooled to room temp(70 F)they were reading around 90. I did a reset and now they are back to where they were originally, Which is about ten degrees too low at room temp.

I haven't installed it on my smoker yet, just used my hands to heat and cool the pit probe to get the fan to start and stop. Maybe that is why I have not noticed the fan slowing and speeding. Thanks guys!
Usually you shall smoke meat at 225F, so calibrate at boiling point at 212F is enough.
The controller will predict the tendency or the "speed" of temperature changes, then decide the speed of fan.
