I like it simple. Let the meat shine with its unique flavors. Med-high heat indirect. Olive oil, salt, pepper, rosemary for a rub. Smoke with a fairly robust wood like oak. Pull and rest for 10 minutes at about 125-130. I cook mine on a Weber kettle.
