That's not for cold smoking.l
It's for introducing smoke just prior to serving.
I've seen it used with a oyster.
The oyster and herbs were placed in a small Mason jar.
A puff of smoke was added and it was then lidded.
You can also uses it to add smoke to soups, sauces, or drinks.
It's entirely different than cold smoking.
