I created a triangle shaped divider, like the shape of a slice of pie, out of expanded metal to create a gap in the charcoal basket. Then I put in unlit, and put about 7 lit briqs one one side of the unlit, so that it basically burned clockwise and slowly. Damn UDS held absolutely perfect low and slow temp of about 235-240 the entire time smoking some ribs.
I guess I started getting lazy and pouring a dozen or more on top and just letting it go. I got a little to confident with my so called "skills" and I forgot that the process needs to remain consistent. After a couple complete rib failures, I'M BACK! The two racks that I made for a pot luck were gone in about 20 minutes.
