Default It's a team work today....ensalada de pollo

We are doing ensalada de pollo ( chicken salad) This is something my mother and most mexican families do during the summer time.

My son Anthony seasoning the whole chicken. He looks determined to do it right!

Seasoned with webers New Orleans Cajun

In the mini wsm it goes with plum and apple wood chunks. I like this pic of my son :o

I used one full chimney of hot coals and it settled at 300-350 during the cook. It was good I wasn't looking for a specific temp. Just wanted to be more than 275 and no more than 350

Here it is after 1 hour. It took about 1 hour 40 min to be completely cooked.

Maribel came home and pulled the chicken into little pieces

Add the corn and mixed vegetables fresh out of the can. 1/4 cup of mayo and sour cream. 1 tbs of black pepper. Mix together good and let them be happy for an hour

Plated with tostadas and tapatio on top. A nice cold lemonade to drink

My daughter helped wash the dishes and I did what I could to clean up also.
