May I be so bold: look very seriously at the Big Green Egg. I started with an electric smoker myself and don't get me wrong, it was a great start to the world of slow cooking. It took about 2 posts and MANY hours of "hanging around" this forum before I realized what I was missing. I decided to commit to the art of slow cooking (because I did end up spending a good deal of $$ on the Egg) and have been rewarded over and over again with great food and very low maintenance. They are expensive, no question about that, but they are worth every penny.
