Default Ribs on a 18.5 kettle WFO Style

Trimmed some spares down to St.Louis cut and rubbed with Fiesta Pork Rub.

Using some rebranded RO briqs and apple wood and going indirect WFO (wide the FARK open)!! No need in knowing what the temp is.
Now that the thin blue is rolling, it's time to start.

After a day of this...

It's time for a few of these while we wait!!
