I wrap mine after 4 hrs ( I cook at 300) it goes back on the pit until probe tender and and gets rested in the same wrap on the kithchen counter until the IT drops to 150
I never met a Cow that I didn't like with a little Salt & Pepper! Certified PORK-A-HOLIC
