I'm just spitballing here:

The fatty gets cooked in that 18-wheeler mobile smoke machine.

It is moved into position with a crane connected to a metal sling holding the fatty.

If someone has the dimensions of the grill surface, I'm sure that between landarc and marty and others, we can figure out how much meat will be required.
