Default Help with jalapeno and cheese summer sausage

I want to try and make some summer sausage in my Stumps, but I have some questions.

1: At what temp do I run?
2: Is there a way to stuff the casings without the use of a stuffer?
3: What kind of casings do I use?

I guess I need help with kind of the whole thing.
