That test clearly was a horrible idea. I mean that much wonderful brisket in one place. Man, what did you guys do? Or the Horror!!!!

Great write up! I've never heard of Piedmontese beef before, and now I am wondering where I could procure some. I've had Wagyu brisket and high grade prime brisket before, and both are a clear cut above the standard CAB briskets I get. I would love to add Piedmontese to my résumé.
