For the most versatility, I would go for a horizontal RF stickburner with an insulated firebox if there is any way you can pull that off. Mine is about that size (mine is 24"X72", if yours is 30 even better) with a single 52" door. I've cooked +/- 60 pound hogs and can fit a 80-100 pound hog is I needed to.
