The Slide out version cost a bit more due to some extra steel to frame out the fire box to allow this option. The yes you do lose on shelf space with this option. The advantages are ease of adding water and removing the pan to run dry or when you went to jack the temps up quickley to set you glazes. Also the water pan does not come in contact with the fire at all so the water more or less does not get that rolling boil you can get with the drop in pan so it uses much less water.
