Is there anything I should do to this before I start cooking on it? Since its so old I would assume it doesn't require any type of seasoning? I was just going to stick a gauge through the top vent but what should I use for meat temp? Is there a probe that won't break the bank and is not a POS?
I'd season it. Lightly wipe down the inside with oil and fire up some charcoal. Buy a Maverick ET-73. You won't be disappointed.
