I smoked on my gasser for years before getting a charcoal smoker. Used three packets of foiled chips on the front burner. Poked various amounts of holes in them to "stage" the smoke so it lasted longer. Place the foil packs on the burner under the grate. Turn the front burner on and leave the back ones off. Should be able to run at 250 no prob and have a decent smoke ring. Good luck!
