Yes you can. Find a cast iron box and use that. If you don't have one wrap in foil and poke small holes in the foil. Place this on the burners and wait for it to produce smoke. Do not soak your chips in water. This just makes steam until the chips ignite.
Not sure what kind of grill you have. This would work great for a Weber.
