I had an urge for something quick and easy.
Started the Kamado with lump and got it red hot and put on the CI griddle. Added my onions and peppers and some fresh minced garlic.
Removed the Griddle and opened all the vents and cranked that sucker up! Cooked the Skirt hot and fast!
Sliced it up and placed it on a preheated pewter platter
Then ate it all up! With blackbeans and some yellow rice!
