I am not sure why you believe you have a problem.
Firstly most home fridges run at around 40F.
Vacuum packing does help in preservation.
You are going to cook at temperatures that will pasteurise the meat.
My personal view is I would cook and eat them.
When you stop horsing around it is time to fire up the BBQ & Smoker
