Hungarian Paprika smoked

5lb pork butt rough grind
2tbl salt
3tsp dextrose
1tsp insta cure 1
1tbl garlic
1tbl blk pepper
3tbl paprika
1tsp allspice ground
1/2c ice water
1/2c Tokaji Hungarian wine (if you can't find this wine, sherry makes a good substitute)
