The regular ground beef is way too lean and comes from dairy cattle wich doesnt have the flavour you long for.
The best would be Chuck, wich is called Schulter or Hals in german.
Metro or other wholesale stores even have american beef chuck roasts wich are awesome for burgers. Just get a good grinder
Ive also used Briskets before. Grinding some Bacon and mixing it with the beef also gives more fat and flavour.
