One question to anyone who might care to answer: will the flat lid affect anything? a dome seems to be the default design for commercial verticals. Does it make a difference?

The commercial vertical smokers all have a grate at the very top of the smoker, so they need the dome lid to provide room for the food.
IMHO I dont think a flat lid will make any difference.
