Many long years ago I worked nights at a hospital. One of the guys got me started on sausage sandwiches with mayonnaise. They were links and already pretty greasy, but working through the night, they were pretty good. I developed a taste for sausage sandwiches with mayo that I have not shaken.
The two smaller butts on the top rack just came off to rest, BTW.
The other two need more time.
