One thing I learned from doing this, I wouldn't have placed the thermostat on the back where I did. Not sure on a good place though. It's a 2" probe and it's between the grill bolts and offset just a hair. Have to be real careful not to snap the probe off sticking the grill in. Next thing I have to do is relearn how to smoke. Never used a UDS or a direct heat smoker, always been on My bandera with the firebox on the side. Oh well, this too I shall learn.
Other than covering the pizza stone in foil to make it easy to clean up and using a metal coffee can in the center of the charcoal basket to slow down fuel consumption, anyone else got a quick "Oh, I remember when I first started and I wish I knew that?" kinda thought?
