This is my go to method for whole hog cooks, been doign it for years. I usually go even cheaper for it and extend a few pieces of rebar between a row of blocks to support the hog, and use some sheets of metal roofing to cover it.

I usually burn down some oak in a separate fire, and shovel the coals in as needed to keep the fire somewhere in the right ballpark temp.
