Had a hankering for some Ribeye so decided to pick up a small roast to cook for Sunday dinner.
Lil' 3.17# Roast rubbed down with Olive Oil, Midnight Espresso Rub and S&P
Cooked it until 118 IT, pulled it off and let it rest until 130 IT and then back on to the kettle for a sear.
Sliced up..Med Rare all the way through
Plated up with a Baked Potato and grilled Asparagus - Good EATS!
