I see you are from Texas, so outside ambient air temp should not be an issue, however a few years ago (I am in Buffalo = cold) I was using an un insulated cooker (converted oil tank) and since it was 5 degrees outside, I had to burn lots of wood..I feel the amount of fuel used meant there was LOTS of air traveling through the cooker...drying my meat soon as I switched to an improved design my food was a lot better...just passing on my experience..
also I use a layer of brown sugar and keep fat towards the heats
