I am thinking firebox/basket in UDS.
It needs too much fresh air to burn.
Much more fresh air by-passes the charcoal basket, which causes big convention.
Convention simply brings away moisture and makes meat dry.
A Kamado smoker has more rediation than convention. It claims more juicy.
I am thing to supply ceramic lining for UDS. But the weight and shipping cost may kill my plan.
I am thinking also to introduce Kamado fire box to UDS.
Fresh air only goes up through grate under charcoal.
Much less extra fresh air is introduced.
Less convention, and less moisture lose
