If it's like the Sirloin Tip Roast in this thread...

I have enjoyed them cooked to medium rare, and also as demonstated in that thread, obviously. PErsonally, I recommend medium rare! Put it in a pan to collect the juices to either make some excellent au jus, or gravy, or just toss some veggies in the pan to cook with the roast like you are making pot roast, but in the smoker!
