ok, let me ask this question rather... how much smoke is needed to smoke cheese? will little wisps every once in a while for 2 hours be enough?

Yep.Most cheese has enough smoke after 90 minutes.Smoke it VERRRY COLD,then vac seal or wrap in Saran Wrap/plastic wrap then in a freezer ziplock and put in the fridge for 2 weeks minimum to mellow.That is my madness method without buying exxxxpensive gadgets.
