What I have read said wait 1-2 hours before shredding the meat. Would 3-5 hours make a big difference say if I just left it covered in foil?

As Aawa said, I too have gone over 5 hours wrapped in foil packed in an insulated cooler covered with towels and / or newspapers.
Still too hot to pull by hand.
