It weighs just over 10lbs
now I have to figure out what to do with it.
I would like to try to perfect my technique and try different things with it
I was thinking about cutting it into 2 lb slabs and vac sealing and freezing what I dont use right now and maybe do a dry brine on one, and a wet one on the other. I dont know about refreezing it though.
All I have done is the dry on the BBB, it came out fine but was a touch salty for me.
