Generally I just use my standard bread recipe, but I use olive oil for the flavor. Big thing for pita bread is making sure they're pretty thin, and that your stone is HOT. Then blammo, perfect pita bread.
My standard recipe is:
300g warm water.
2 T.B Sugar.
2 T.B. Oil.
1/2 T.B salt.
500g bread flour or half bread flour and half whole wheat flour.
2 ts. yeast.
Typically I'll triple or quadruple that recipe, and make pita bread and bread loaves from that. I typically weigh the pita bread out to about 3 or 4 oz. of dough, that makes the pocket size my family enjoys. Wanna say about 7" and 1/4" thick or somewhere around there.
