Default 4 LB Bone in Turkey breast and Beef ribs

I want to run them at 275. I figure the ribs will take about 5-6 hours. The breast maybe around 3. I was thinking I would put on the ribs, then two hours later, the breast. Can ribs rest for multiple hours like chuckies/brisket? I don't think the breast should rest for more than 30 mins. What do you guys think?
