I just did my first brisket yesterday and was tempted by just doing the flat (since I really just wanted some sliced brisket) but quickly was convinced by the folks here that a packer is the way to go. After cooking one, I see why!

As others have suggested, find yourself a packer and give it another try, I think you'll like the results.
