Did mine last year with mesquite. LOVED it. Of course, I really like mesquite with beef. Oak ain't too bad either. If you can find some Jack Daniel's barrel stave chunks it would be even better. (I've been known to pay the exhorbitant cost for their little briquette bags just to get those chunks...)
