Hands down the Chuck Eye wins for me, flavor and texture. The Shoulders reminded me of Sirloin, they also take on the Salt more than the Eye's. The flavor of the shoulders is not bad but not a flavorful as the 7-bone chuck steak, not a chewy either.
4 Chuck Eyes and 2 Chuck Shoulders, Boneless.
Did my Salt bath on some, my wife likes the Salt method. Salted for about 30 minutes.
We had a variety of Medium to Medium Rare, I prefer my Steaks medium.
Sorry no Fork shots but I can say everyone's Steak was to their liking.
