I was also thinking about something along the lines of a chicken breast (grilled). You guys have some suggestions on a really good sauce for em? Like a marsala or something.
Bobby B, you can do a carving station or platter it up "family style." If you steak out the LOins, might I suggest wrapping them in some maple bacon? Or getting some crawfish for the top of them steaks with a nice sauce of your choosing.
