Make up some chili verde put out plenty of "fixins" and TA-DAAA!
It' s my newest favorite thing that I order at Mexican restaurants around here.
Chicken wangs are also great and won't take so long. (about an hour). You could put out a few different varieties. OR....just grill/direct smoke em all with a simple salt/pepper/garlic seasoning and then just toss em in different sauces to make it even easier on the cook. These could be done in batches too if you want.
