You really can't go wrong with either grill. With the Pro, you could be giving up a small amount of air tightness for the added features of the electric starter door and The ash removal tray.However, unless keeping temps much below 250 is a big concern for you, it shouldn't be a problem. Removal of ash in a conventional Kamado such as KJ can be an unwanted chore.
I might add, many Pro users have had great success keeping a prolonged 225-235 low and slow cook. It may just be a little more of a challenge with the added bottom vents.
