I am still learning fire management with this cooker. I was adding wood when it dropped to 245... Id say it averaged 260 the entire cook minus one spike to 300 (not sure how that happened... extra dry wood or left door open too long... no ideal...)

rub was a little pepper, brown sugar, garlic powder, real simple&basic...

Last 30 mins added tiny bit more brown s, and a splash of honey water as they came off... (Not enough to make it a candy rib)
