Cold Smoking Moron - don't make me yawn
I'm a moron.
I cold smoked cheese today.
While it is "cold" smoked, there is heat - slight heat, but heat none the less.
Therefore, when I cold smoke, i put the lit portion of the smoking tray in a corner away from the cheese.
Well today I was rushed.
Instead of placing the individual chunks of cheese on the grate, I just stuck the tray of cheese on the grate. It was perforated so I figured the smoke would be fine.
I forgot it was aluminum.

The heat in the corner transfered rather easily to my cheese.
When I opened the smoker hours later, my cheese was about an inch shorter than it used to be.
I salvaged about 2/3 of it, but I feel like a moron.
