Default Smoked Salmon Today

Had a craving for Smoked Salmon
Brined over night in water, brown sugar sea salt and a crushed bay leaf
then air dried in cool room for a couple hours

then on grill around 200ish for 3 hours

took skin off and re-grilled for 30 more mins...
