Default Smoked Duck....

and Andouille Sausage Gumbo.
Smoking the duck was easy, making the gumbo was a labor of love.

I rubbed the duck (domestic duck) with butter, seasoned with S&P...



into the BPS UDS at 325F....
Saved the drippings and duck fat for the gumbo.





the duck tasted great, it was hard to save some for the gumbo!



made smoked duck stock...





roux.. 3/4 cup duck drippings and 3/4 cup flour...



onions, garlic, celery, peppers and parsley...



The smoked duck and andouille sausage gumbo...





I've made this before but this batch tasted extra special. I think it was the drum.
